The commune of Saint Aubin lies at the western fringe of the Côte de Beaune overlooking Auxey Duresses, Meursault, Puligny-Montrachet, Chassagne-Montrachet and Santenay. Saint Aubin Premier Cru wines offer fantastic value and they are often superior in quality to the village wines of neighbouring Puligny Montrachet. The Premier Cru En Remilly vineyard is situated above sheer cliffs and is very close to the Montrachet Grand Cru vineyard. Grapes for the Louis Jadot Saint-Aubin 1er Cru En Remilly are all harvested by hand and put in small cases in order not to damage the fruit. At the winery they are pressed softly, then fermented in oak barrels (one third new) produced by Jadot's own cooperage. Maturation lasts for approximately 15 months on fine lies before bottling.
